White mold cheese whose name comes from Monte Grappa (Mount Grappa) in Veneto. It is made in a small workshop on the way to the mountain. The name comes from the fact that the snow turns the mountaintop white and the cheese covered with soft mildew looks similar, therefore the name "Neve" (Snow in italian). The production is low and the recipe has been passed down only among cheesemakers. The only ingredients are milk, salt, rennet (milk-clotting enzyme), and strains. The cool climate grows velvety mildew on the surface of the cheese. The dough is cream to straw depending on the maturity. Dense and elastic, with medium cheese eyes scattered irregularly. The aroma is fresh and you can enjoy the gentle aroma of milk. Compared to other mold-based cheeses, this cheese has less habit and is delicate and easy to eat. This cheese is recommended for children, the elderly, and cheese beginners. Aromatic nuances appear in the aftertaste.

In order to have a cheese approved as a PDO (Protected Designation of Origin) cheese, it must be made with a specific breed of cow.

Soft ripened cheeses are produced by adding and growing white mold on the cheese surface. The enzyme produced by the mold breaks down the protein from the outside to the inside, giving it a soft, creamy taste.

In these mountainous areas where there is heavy snowfall in winter, you find the production of large, well-preserved, long-term aged cheeses.
