PRODUCTS

How long does cheese last?

The “best-by” date is just a reference and cheese past its expiration date does not mean it has expired.
Aged cheese after its expiration date changes flavour and gets richer flavour, while fresh cheese and sliced salumi should be eaten as soon as possible even before the expiration date so that you can taste in its freshest condition.

Is mold on cheese okay to eat?

Cheese not well preserved or half-eaten is prone to mold growth. However, even if new mold that is not the original cheese grows, it can be eaten inside, so remove only that part and consume as soon as possible. Even if the flavor is slightly reduced, it can be eaten deliciously enough if it is heated or used for cooking.
Blue mold type:
The color of the dough may be reddish, but it is a discoloration caused by changes in protein due to aging. There is no problem with the quality.
Since blue mold produces white hyphae, white areas can be seen depending on the growing conditions. There is no problem with the quality.

Are cheese rinds edible?

Of the hard types, those with waxed exodermis and those with product label paper on the skin should be taken off. Mildew and wash types have their exodermis covered with mold, but they are completely harmless to the human body and do not need to be removed.

The color of the sausage is a bit dark. That means it is bad?

Our sausages do not use any preservatives or colorings. Therefore, the color may become a bit dark, but it does not affect the quality or taste of the product, so you can enjoy it without problem. If you find some packaging problem, please contact us.

What does DOP mean?

DOP is an abbreviation for Denominazione di Origine Protetta (origin name protection system) and is a standard for agricultural products certified by the EU. Indicates that the product is produced, processed, and adjusted by the specified manufacturing method for the product originating in a specific area. For example, the world-famous Parmigiano Reggiano DOP cannot bear the name “Parmigiano Reggiano DOP” in a limited area of Emilia Romagna unless it is made by a specific method. Parmesan cheese cannot be called Parmigiano Reggiano because of its different production areas and manufacturing methods. It is a standard set to prevent the spread of so-called fake products and to keep the tradition of manufacturing technology.
