Salami with a pleasant spiciness of chilli and paprikaSalami Piccante is made by mixing various parts of pork (shoulder, thigh, belly, etc.), coarsening them to medium, and kneading a spice mix of chili peppers, paprika, white pepper, fennel seeds and garlic into the dough. A smoke flavor makes it a perfect accompaniment to wine or beer. It is delicious as a pizza topping or as a sandwich filling with mild cheeses such as Asiago Fresco or Provolone.
