Pennette with Gorgonzola dolce and Speck

How to make

Gorgonzola and speck are salty enough, so if you don’t like salty flavorings, we recommend not to add salt into the water when you boil the pasta.

  1. cut the gorgonzola dolce and speck into small pieces. Crush the walnuts.
  2. Put the speck into a large frying pan and place over medium heat. Cook, stirring occasionally, for 5–6 minutes until the fat renders and the speck is crisp. Add the Gorgonzola dolce and place over medium–low heat. Cook, stirring regularly to ensure the mixture doesn’t split, until the Gorgonzola melts. Season with pepper.
  3. Bring a large saucepan of water to the boil, add the pasta and cook until one munute before the cooking time.
  4. Drain the pasta, add to the sauce and toss to coat for a minute. Portion the pasta into serving bowls and top with the peppr, the walnuts and the olive oil.
