There are many varieties of salami dipending on the regions. Typical examples are "Salame Napoli", which comes from Campania, and "Salame Milano", which is from Lombardy. As "Salame Napoli" processed with coarse grind has a large fat portion, you can feel the contrast between the taste of meat and fat. Dolce is flavored with pepper, garlic and fennel. Flavored with pepper, garlic and fennel these spices give it a smooth and easy-to-eat taste as the name "Dolce - mild" suggests. As the import of pork from Italy was banned, we had our Italian cured meat producer ask their Spanish counterpart to make it according to the Italian recipe.
