In Roncofreddo, in a marvelous landscape full of olive hills, you can find a family-owned cheese cellar called “Fossa dell’Abbondanza”. Here, the cheese artisan Renato Brancaleoni makes cheeses that express the characteristics of Roncofreddo. Meaning “Cheese of Silence”, “Formaggio del silenzio” is aged wrapped in a red wine-soaked linen, resulting in the cheese absorbing the fermented scent. While having a buttery flavor with a slight acid aftertaste typical of goat milk-based cheese, Formaggio del silenzio is a rarity with its white colored soft and delicate texture, being simultaneously matured and soft.

Goat cheese is characterized by its slight acid and a refreshing taste, as well as by its brittle and fragile texture. Goat milk contains smaller fat globules compared to cow’s milk, making it easy to digest.
