Coppa is made using the neck of the pork. It's more like the salami process, which is aged longer than prosciutto. After kneading salt and spices into the meat and letting it penetrate inside, the meat mass is natural. It is packed in the intestines and tied with a hemp string. It is dried and aged in a strictly temperature-controlled space.
